You have to have a good cookie base, and this is my favorite recipe:
- ½ pound (2 sticks) butter, softened
- 1 c. firmly packed brown sugar
- ½ c. granulated sugar
- 2 eggs
- 1 tsp. vanilla
- 1½ c. all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon (optional)
- ½ tsp. salt
- 3 c. oats
- Up to 3 cups of your preferred dry ingredients (chocolate, nuts, fruits, etc.)
Heat oven to 350°F. In large bowl, beat butter and sugars until creamy.
Add eggs and vanilla; beat well.
Add combined flour, baking soda, cinnamon (optional), and salt; mix well.
Add oats and dried ingredients.
Continue to mix well, until combined.
Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
Bake 10 to 12 minutes or until light golden brown.

I find that this recipe makes at least 36 medium sized cookies! It is a great recipe!
