Malachi's Favorite Pizza Rolls
I am a mom that sends a lunch EVERY SINGLE DAY! In my mind, eating the same thing for lunch is never fun; however, my children could eat this one food each day without complaint. (Side note, they do NOT get them every day!) Pizza Rolls! They are super simple, and you control the ingredients that go in.
Here is what you need:

Pepperoni (Please choose an all natural/uncured brand like Hormel Naturals or Applegate Farms)
Cheese
That's it, three ingredients!
First, you have to let your dough rise, according to package instruction. I usually put it in a mini muffin pan that holds 24 muffins. I spray the pan with my Misto olive oil, drop one frozen ball in each cup, then cover loosely with a piece of plastic wrap that has been sprayed with oil (to prevent sticking).
Once the dough has risen, and you are ready to prep these for the oven, you simply roll them out one at a time.
Place 2-3 pepperoni slices (if small rounds) on the rolled out bread.
Place a piece of cut mozzarella, or you could use your cheese of choice, on top of the pepperoni.
To roll, I start by bringing in one long side.
Then, tuck the two edges in.
Now, roll it, and press the bottom flap to seal the dough.
I place these on a greased cookie sheet, and place them in the oven (preheated to 350 degrees). They need to cook for 15-20 minutes, depending on how dark you would like the crust. We typically give them 16 minutes.
Pull them out, and let them cool. (I usually have some cheese ooze out, depending on how much cheese I use and how well I sealed the edges)
My kids can never let me make these, without practicing their quality control skills. Malachi simply loves them!
I make a large batch (usually 24) every two-three weeks. I wrap them in plastic wrap, and place them in a freezer safe bag or container. When we are ready to heat them for lunches, you simply take the number you need out of the bag, remove the plastic wrap, wrap the pizza roll (or two) in a paper towel, and microwave for 1 minute. Perfect! This makes for a super easy lunch item on busy mornings. I hope you and your family enjoy them as much as my children do!
